Chicken Chow Mein – Drea’s Dainty Kitchen

Looking for a quick and tasty meal then why not tuck in this delicious chicken chow mein which you can make in around 35 minutes. The chow mein includes marinated baked chicken, vegetables and noodles with a delicious chow mein sauce and will probably be quicker to prepare than to order and wait for a takeaway to de delivered.

There are many ways to make chicken chow mein but this version uses similar ingredients to the chicken chow mein that I have bought from Chinese takeaways in the UK. The ingredients usually include chicken, noodles, beansprouts and onions. There are some that include cabbage but most don’t from my own experiences.

What I love most about chow mein is the crunchy beansprouts and onions distributed throughout the noodles which combined with the chicken makes a satisfying meal. Enjoy this meal as a quick mid-week meal or a weekend treat and you can also substitute the chicken for other ingredients such as prawns, pork or beef.

Ingredients for Chicken Chow Mein

  • Chicken – I use chicken breast but you can also use boneless skinless chicken thighs.
  • Marinade for the Chicken – the ingredients for the marinade include: garlic paste, ginger paste, soy sauce, sesame oil and white pepper.
  • Chow Mein Sauce – the chow mein sauce includes: oyster sauce, soy sauce, light brown sugar and sesame oil.
  • Noodles – I use uncooked noodles and prepare them myself. I have included the weight for cooked noodles in the recipe card.
  • Sunflower oil – or any other neutral flavoured oil.
  • Garlic – finely chop the garlic.
  • Ginger – peel and finely chop the garlic.
  • Onion – slice the onion into medium slices.
  • Beansprouts – use fresh beansprouts.
  • Spring onion – for garnish. This is optional.

How to Make Chicken Chow Mein

1. Firstly, make the marinade by adding the garlic paste, ginger paste, soy sauce, sesame oil and white pepper to a small bowl then mix the ingredients together. Add the whole chicken breast to the marinade and fully coat the chicken in the marinade. Allow to rest for 20 minutes while you preheat the oven to gas mark 6/400oF/200oC.

2. After 20 minutes, place the marinated chicken on a baking tray and bake in the oven for 25 minutes. Remove from the oven, allow the chicken to cool then slice the chicken into small pieces and set aside. Add the oyster sauce, soy sauce, light brown sugar and sesame oil to a bowl to make the chow mein sauce, mix and set aside.

3. Place a pot of water on a high heat and bring to a boil. Once the water is boiling add the noodles and cook or soak according to the package instructions. Strain the noodles, rinse with cold water then set aside.  Skip this step if using ready cooked noodles.

4. To a heavy duty pan or wok, add the sesame oil and allow to heat. Once the oil is slightly sizzling, add the chopped garlic and ginger then cook for around 3 minutes. To the same pan add the cooked noodles, cooked chicken, beansprouts and chopped onions then stir fry them all together for 1 – 2 minutes. Add in the chow mein sauce and mix it into the chow mein. Once everything is heated throughout, remove from the heat and serve.

Recipe Tips

  • The recipe serves 2 but you can easily double this recipe and make 4 servings.
  • Remember an adult should eat no more than 6g of salt a day. This recipe doesn’t use salt but uses soy sauce which contains salt. You can use low sodium soy sauce to keep the salt content lower but the chow mein will be lighter in colour.

Storage

You can store any leftover chicken chow mein in an airtight container and store in the fridge for up to 3 days. You can reheat them in the oven or microwave.

  • 120g beansprouts

  • 1 chopped spring onion optional
